The thing I do differently is that I peel and dice the potatoes and place in a steamer basket and place the eggs on top and cook in my Instant Pot for 4 minutes on high pressure with quick release. I made it with 3 pounds of yellow potatoes instead of 5, but because I made the dressing separate I was able to add just the right amount without it being too runny. I probably had a cup or less less over of dressing.
I made this 2 days ahead of when I am going to serve it. It is easy to make, but was not sure about gold potatoes! I could only find store brand, seemed to work fine, but I think we like flavor of the reds a bit more. Good idea to make ahead, especially when for a BIG picnic right here!

The only differences I made to it was to pan crisp a really good crisp and brown my unpeeled baby red and yukon potatoes in a little butter and seasoned with paprika and garlic powder.
But I used a some chopped dill pickles. Me and my 11 year old son love potato salad so I am always trying different ways to make it. He said it was so good that it is like hugging your mother, lol. I use unpeeled, small red skin potatoes. Wasabi mayo and cayenne pepper in potato salad is offensive…such blasphemy.

I added a tbsp of turmeric for color, a couple tbsps of wasabi mayo, tripled the amount of paprika, added a tbsp of cayenne. Those additions blended well with the base recipe.

This recipe is spot on, the only change I made was we chopped up Walmart Spicy Bourbon Smoked pickles for our relish! Try these pickles! Completely changes flavor. All else pretty solid. Instead, I added chopped green onion and cooked celery root with potatoes. I added mustard from New York, mellow and pickle like and mustard from Russia, sweet and spicy.
Waiting for for the next day to taste flavors. I did have to make a couple of changes because of the ingredients I had in the house: I only had Idaho potatoes and no celery seed, but had celery salt so I used that and left out the salt in the recipe. I just prefer the flavor of apple cider vinegar. Made this to go with dinner tonight. What I did different, I used dill pickles with some juice for the relish. I then used pickle juice for the vinegar. Only used one stalk of celery finely chopped, and finely chopped the sweet onion. Also used russets because it is what I have. Do mix the fresh dill in the mix, or just put it over the top when done?
I used to wonder why my potato salad never turned out and I hated eggs in my potato salad, well gee, what binds everything together well are the eggs. I tweaked this recipe a bit, as 5 lbs of potatoes is quite a bit for a party of 2. I also used a small shallot instead of the onion and a finely diced dill pickle as my taste buds prefer sour than sweet. Also, your preference of mayonnaise makes it or breaks it.

I used 1cup mayonaise and 1cup greek yogurt instead of all mayonnaise. However, they kept coming back for seconds. They loved the egginess of it and it was definitely a winner over the German Potato Salad which was yummy but not as fondly remembered.
